Kneading machines are widely used for kneading dough either in public catering facilities and also in baking. However, before you buy a dough mixer, you need to decide what parameters of the equipment and design features will fully comply with all your requirements.

Speaking about structural features of dough kneaders, it should be noted that key functional features of this equipment include a drive mechanism, kneading arm and bowl, the amount of which directly affects the productivity of the mixer.

Kneading bowl are generally made of stainless steel and it’s form may also vary. Furthermore, it can be movable or stationary. When working with dough mixers with movable bowl are used also such appliances as bowl elevators providing lifting of the bowl with the mixed dough up to the level of the hopper of dough divider or the surface of the cooking table.

Kneading arm of dough kneading machine may have different shapes, which depends on the type of dough. For example, spiral kneading arm, typical for spiral dough kneaders allows to provide imitation of hand dough knead. As for the work features of dough mixers for stiffdough, for this purpose will be more suitable kneading arm in the form of paddle. In different models of dough kneaders may be provided only one or two speed mode, wherein one of the two speeds is optimal for mixing components included in the formulation, while the second is intended for the formation of dough structure.
