There are many public food facilities, for which pizza is the calling card. There is a need for cafes and other catering spots in professional kitchen equipment for cooking pizza. Modern pizza ovens can also be used for baking bread. There are several types of pizza ovens. Wood-burning pizza ovens are typically in-build or movable. Prototypes of this equipment have been known since the 16th century. Cooking time in modern wood-burning pizza ovens is about 2-3 minutes (although heating up of the oven is up to 60 minutes). Such equipment is usually installed in the main hall of the pizzeria, so that visitors can watch the process of baking the pizza on fire. Hearth pizza ovens may be gas or electric. They are small in size and can consist of one or 2-3 levels. Tubular heating elements heat up the main chamber of pizza oven, and the pizza is cooked directly on a ceramic plate or in a special baking dish. In conveyor pizza ovens is used a convection method of heat treatment (by circulating of hot air masses). Pizza oven of this type takes up more space, but is more convenient to operate, and provides uniform heating and baking. Whichever variant you choose, when you have in the menu of your catering establishments such popular dishe like pizza, you will certainly wincrease the inflow of visitors and the profitability of your catering facility.
